Yunnan cuisine


 

Yunnan cuisine (???; pinyin: yúnnán cài) is an amalgimation of Han and Chinese minority cuisines. As the province with the largest number of ethnic minorities, Yunnan has a great variety of food, and it is difficult to make generalisations. It could be argued, however, that Yunnanese food is quite spicy (as compared to Sichuan cuisine) and makes greater use of mushrooms than other Chinese cuisines.
