The fried potatoes are called chips in British and international usage; and while American English calls them "french fries" the combination is still called "fish and chips". American style french fries are typically slimmer than their English counterparts, thicker fries are usually referred to as "Steak fries"), (Potato chips are a different potato-derived food, and are known as crisps in the United Kingdom.) The traditional way is to fry in dripping (beef fat), and this tends to be retained in the north of England and Scotland. In the south vegetable oil is more common. This does impart a different flavour to the dish and means the chips are acceptable to vegetarians. Some maintain that the best types of potatoes to use for chips are 'Lincolnshire Whites' or 'Maris Piper'.
