Cuisine of Vietnam
Vietnamese cuisine is famous for almost exclusively using fish sauce, although soy sauce and hoisin sauce are used widely as well. Vietnamese recipes use a lot of vegetables, herbs and spices like lemon grass, lime and kaffir lime. The Vietnamese also have a number of Buddhist vegetarian dishes. Most common meats used in Vietnamese cuisine are pork, prawns, various kinds of tropical fish, and chicken. Beef and duck are used less widely. The consumption of unusual meats such as snake, dog, and the like are a phenomenon enjoyed almost exclusively as "cocktail delicacies" with alcohol, and are not considered mainstream meats.

N??c ch?m is a multi-purpose dipping sauce. Made chiefly from fish sauce, chile peppers and lime or lemon juice, it is always present on Vietnamese tables.

The French influence on Vietnamese cuisine can be seen in the presence of bánh ḿ (baguettes), which are mostly served as sandwiches with Vietnamese meats and herbs.

Vietnamese cuisine is widely available in France and in the USA in areas with dense asian population. In recent years it has become popular in east asian countries.

Famous Vietnamese dishes:

- Spring rolls (G?i cu?n or Nem Ran) – Shrimp rolls wrapped in rice paper
- Summer rolls (Ch? gị) – Fried rice paper rolls filled with pork meat and mushrooms
- Pho (Ph?) – beef noodles, a northern Vietnamese breakfast. However, in Western Countries it is eaten as lunch and dinner too. Also eaten with chicken or pork instead.
- Bun Rieu (Bún riêu) – noodle soup made of rice noodles in chicken or pork broth with a lot of tomatoes or (the original variant) chiles.
- Com tam (C?m t?m) – Grilled pork or shredded pork over broken rice. May include crispy egg rolls (ch? gị) or broiled egg.
- Ca phe sua (Cà phê s?a ?á) – strong coffee most often served iced with milk (particularly sweetened, condensed milk).
- Banh Bao (Bánh bao) brioche ball with either pork or chicken meat, onion, mushrooms and vegetables inside. Exclusively vegetable banh bao are also available.
