Bernard Loiseau

Bernard Loiseau (January 13, 1951 - February 24, 2003) was a French chef.

Bernard Loiseau was born January 13, 1951 in Chamalières. As a teenager, he decided to become chef. His first contact with a high quality restaurant was at the "Troisgros" in Roanne between 1968 and 1971. He owned his first restaurant "La Côte d'Or" (in Saulieu) in 1982. The well known Guide Michelin gave his restaurant a 3-star rating in 1991. His fanatic attention to detail, frenetic work ethic and discerning palate propelled him to the top of a luxe profession with a knowledgable and loyal but unforgiving and demanding clientèle.

He was the first star restaurateur to introduce his company in financial market in 1998. In the late 1990s a new form of Asian-inspired "fusion cuisine" swept France, catering to an international corporate class and pleasing trend-driven "foodies" (a neologism of the movement)— which Loiseau resisted, with a sense that his grip was slipping.

On February 24, 2003, Bernard committed suicide, shooting himself in the head, after the Gault Millau restaurant guide downgraded his restaurant from 19 to 17. At the same time a downgrade by Michelin from three to two stars had been prematurely rumoured, but was not done and a denial had been issued to the press.
